Two brothers are hoping to bring the flavours of Chronicle Country to their new restaurant.
Kieron and Michael Singh are restaurant manager and head chef respectively at the Croft Kitchen in Biggleswade – an eaterie which will specialise in local produce.
The two opened the doors of the Palace Street restaurant – the former Il Carafino – on Monday (June 3).
Kieron, 31 and Michael, 29, who live in Biggleswade and Wrestlingworth respectively will be serving modern British cuisine with some global twists.
Former Stratton Upper School student Kieron, who has lived in Biggleswade for more than 15 years said: “We think there is a gap in the market for a restaurant like this in the town – one where people can enjoy high quality British cuisine where the ingredients are as locally sourced as possible.
“Much of our produce, for example will come from Woodview Farm in Gamlingay including our cattle, which is reared in Tempsford.”
The brothers have extensive experience in catering.
Michael has been a professional chef for 10 years and has held previous head chef positions.
One of his previous jobs was at the Black Horse in Ireland where he worked with executive chef Tracy Buggins.
Kieron has also been trained as a chef.
The restaurant’s name also reflects the brothers’ heritage.
Kieron added: “A croft is a kind of cottage in Scotland, where we were born, and we thought the building looked a little like a cottage when we first came to see it.”
